Whether you make it yourself or buy it from your local supermarket, rolled fondant icing is the icing of choice choice for wedding cakes and for other "special occasion" cakes. Drying to a smooth matt porcelain finish, it is suitable for cakes of all shapes and provides the ideal base for the most intricate or simplest of decoration.

Fondant icing is a soft sugar-based icing that is generally rolled out to a thickness of about 1/4 inch, layed over the cake and smoothed and pressed into place before being trimmed for a perfect fit.

Despite the fact that fondant cake decorations are ideal for a wedding cake, fondant icing is not always easy to work with so here are a few tips to help you get that perfect result.

Tip 1. Fondant icing should be stored in a plastic bag (or covered in a non-permeable plastic wrap such as Sara wrap) and placed in a tightly sealed container to prevent it from drying out. Fondant icing should also be kept at room temperature and should not be put in the refrigerator. If the icing dries out and harden it can often be revived by popping it into a microwave oven for a few seconds and then kneading it back to life.

Tip 2. Fondant icing dries out very fast and should be applied to the cake quickly (within no more than 5 minutes) after it has been rolled out. Once fondant icing is applied, the cake can be stored without problem for several days at room temperature.

Tip 3. In the case of cakes with a number of tiers, each tier should be iced individually before assembling the cake. It is also advisable, when the final design allows, to store the tiers separately and to assemble them when the cake is needed.

Tip 4. For that truly professional looking finish, and to cover any rough edges, make a decorative border to go around the cake and, particularly, to cover the join between adjoining tiers.

Tip 5. Fondant icing should always be used at room temperature.

Tip 6. For a smooth and flawless result, ensure the working surface, rolling pin and hands are both clean and lint free. jewelry on your fingers or wrists, long hair, long fingernails and fluffy clothing could all cause problems.

Tip 7. A "crumb coat" (a thin layer of icing) should be applied to the cake before the fondant is added. This produces a tacky surface for the fondant icing to stick to.

First of all, spread a generous amount of butter cream on the surface of the cake. Hold the spatula on the icing and rotate your turntable until the top is smooth. After that, smooth the icing with chocolate frosting. If you like thick and firm chocolate ganache, leave it for a few hours after it is made to thicken the icing. Try to smooth it on the cake though it is a little difficult at this consistency. Use a fork to decorate the surface into wave like pattern, basket weave design or any design which looks good on the ganache frosting.

Another tip is that one may keep the icing 'ring' at least a half inch from the border, around the cake. You can fill that ring with fruits, nuts or tasty custards. Now you can start your cake decoration using all these tips.

Haunted House – Sheet, Novelty Pan or Sculpted Castle

This Halloween cake can be made in many ways.

1. Trim a sheet cake into the shape of an old Victorian house with gables. Then pipe icing windows, doors, and other details, including cobwebs. Ghostly shapes are easy to pipe and fill in with snow-white buttercream icing. Add bats and other easy to pipe Halloween creatures.

2. Or you can use a novelty cake pan with the haunted house theme. Many of these come with decorations and instructions.

3. For a really exciting Halloween cake, try a haunted castle cake! Butter cakes works well. Stack two or more cakes, being sure to place supportive plates in between the layers. If the cake is large like a wedding cake, add cake dowels.

Towers can be created with upside down ice-cream cones or paper towel rolls, shortened to fit proportionally to your cake.

For edible towers, bake a pound cake in a jelly roll pan, and then using a cookie-cutter or glass, cut our circular pieces of uniform size. Skewer these, and then stick the skewered towers into the cake. Then ice them and pipe designs and windows.

Start with 2 bundt cakes (butter, pumpkin and pound cakes work well). Then after leveling and icing the bottom of the cakes, fit them together to form the pumpkin. Cover the pumpkin with smooth, orange buttercream. Then pipe and/or use rolled buttercream to model the facial features. Easy instructions for making this dinosaur cake:

Bake a sheet cake the size that you need. Make buttercream icing. Draw the dinosaur on the cake using an icing filled bag and round tip, size #5. Cut away the cake from the outline of the dinosaur. Piece the tail onto the dinosaur using the extra cake pieces that you cut away from the dinosaur outline.

Make yellow icing. Using star tip, size #18, fill in the yellow areas of the dinosaur.

Next, make orange icing. Using star tip, size #18, fill in the orange areas of the dinosaur.

The eye is piped on using round tip, size #5 and black icing. The teeth are made using star tip, size #16 and white icing and piping the tooth on, ending in a small point.

Next, make green icing for the ferns. Use a star tip, size #18 and make long strips ending in points for the ferns. Make the strips on each side of the fern leaf. Use the same green icing and round tip, size #5 to pipe the centerline on the fern leafs (refer to the picture.)

The Elmo cake : testimony to make Elmo cake decorating

Testimony 1

My 3-year-old son insisted that his sister needed an Elmo cake for her 1st birthday. It’s from a 9-inch and 6-inch round cake, covered with fondant icing. Make the flowers using an extra small flower cutter (glue it on the Elmo cake).

The Elmo is from the Wilton stand up bear cake pan. Cut the nose of the bear and everything else to make it smooth. Then cut the right and left sides to make it oval. Make the eyes, nose, and mouth from fondant icing. Cut the left arm of the bear, and replace it with a Butterfinger.

Cover the whole thing up with buttercream icing, red color. A border of orchids was made from fondant icing using orchid mold, but you can just pipe buttercream along the border.

Testimony 2

I bought an Elmo cake pan by Wilton, I bought white icing, and mixed a dark red food coloring in to get the perfect color for Elmo’s face. I then used white icing to make the eyes, and white icing mixed with black food coloring to make the eye balls, and mouth.

I also mixed white icing with orange food coloring for the perfect color orange nose. I used a plastic baggie, and poked a hole in the corner using cake tips to make little dots for Elmo’s hair. This cake is really simple, and fun. Hope you enjoy. Be careful, the red icing can stain.

Butterfly Birthday Cake Ideas

Don't let a birthday flutter by without trying out a butterfly birthday cake idea. Big girls and little girls alike will enjoy a butterfly birthday cake for their special day. Making a butterfly cake is a breeze no matter which design you choose.

Butterfly Shape Cake

Create a cake in the shape of a butterfly using a round, single-layer cake. Use a regular round cake pan of any size to bake a single layer. Place the cooled cake on a stiff board that has been covered with aluminum foil, parchment paper or waxed paper. Cut a 1-inch strip from the center of the circle. This will become the body of the butterfly. Turn the two remaining half circles around to become the butterfly's wings. Frost and decorate the cake. Use string licorice to create antennae for the butterfly cake.

Butterfly Toys Cake

Buy small, plastic toy butterflies from the toy or party department of a discount store. Wash them in warm, soapy water and dry thoroughly. After frosting the cake, place the butterflies in various positions on the cake. For a bit of pizzazz, place clean silk or plastic flowers on the cake to create a butterfly garden for the plastic butterflies. Use a base of white frosting to make the colors of the toys or flowers show up well. Any shape--round, square or rectangle--will work for this butterfly cake.

Butterfly Drawings Cake

Use white frosting as a base to start with on the cake. After frosting the cake (any size or shape works) use a toothpick to draw butterfly designs in the frosting. Color in the designs with frosting pens that are available in the baking department of most grocery stores. Use butterfly outlines from coloring pages (either from a coloring book or an online source such as dltk-kids.com) as a design basis.

Candy Butterflies Cake

Frost a cake of any size or shape--a sheet cake or a round cake will work equally well. Use candy pieces--M&M's, Spree, Skittles, Sweet Tarts, Nerds, licorice--to create a butterfly-shaped design on the top of the cake. Use the candy to create an outline of a butterfly or take it a step further by filling in the wings with a variety of candies. Nerds candies could be shaped to create antennae. You could also use gummy worms to create the shape of a butterfly.

Butterfly Cupcake Cake

Bake cupcakes and ice them in colors suitable to be a butterfly's body and wings. Arrange the cupcakes on a covered board or a large platter. Create the shape of a butterfly with the various colored cupcakes. A twist with this idea would be to decorate cupcakes in a variety of colors then arrange them in creative patterns for the butterfly's wings. Try a variation on this idea by positioning undecorated cupcakes in a butterfly shape. Make sure the cupcakes are pushed close together, then cover the top of the butterfly shape with a layer of frosting in the same manner you would frost a regular cake, or make a frosting swirl on each individual cupcake. Use decorative frosting pens or gels to create decorative effects. Don't forget the antennae!

You've really only have the option of a different dress or a different cake, and a lot of people choose to show their diversity through having a very unique wedding cake.

If you truly want your wedding cake to say something different, and you really want to have something at your wedding that your guests will talk about for years to come, you should consider some of these unique wedding cakes for inspiration.

One couple had a square wedding cake that had two swans swimming on a pond on top of it, all made out of icing. It was a very elaborate cake decorating, with ribbons and flowers adorning it as well. However, it was only one layer, so some people may not want a cake decorating like this.

I have also seen some very unique "box" wedding cakes. I don't mean that these cake were just shaped like a box; one of these wedding cakes was a three layered cake, and each of the layers was decorated like a different present, complete with bows. Another couple had a cake that was shaped and elaborately decorated as an open hat box, with flowers spilling out of it.

One of the most unique wedding cakes that I have seen so far has to be a Chinese wedding cake. It was a three layered red cake, decorated with the most intricate detail and flowers. Another strange wedding cake one couple had was a Phantom of the Opera wedding cake. This one was just one layer, and it was white, black and red, with the white mask sitting on top of black icing, and a red icing "cloth" draped over it.

Another unique and not often used wedding cake idea is a cupcake wedding cake. All you have to do is buy a cupcake tree and bake and decorate cupcakes to place on it.

If you have started your party planning you probably have a theme in mind. Making a theme birthday cake doesn't have to be complicated.

If you have a theme birthday cake idea for a 40th birthday, why not make a black cake. You can create a perfect touch that no one will forget. You will have to use the paste coloring as you will have a hard time getting black without it. I once made black tire cookies and though no one would eat them. Well I was floored when they disappeared quickly.

You can also make them birthday cakes for children. They love the idea of having their favorite character on a cake. Why not try your hand a something new. You could print out the character and make outlines of each color practice on paper and then do the cake. It doesn't have to be perfect. Kids are very forgiving.

With imagination and some basic cake decorating you will be amazed at how fun this soon becomes. You will be the one that children want to make their cake!

Edible Printouts For Your Cakes

Just how do those bakeries do the birthday cake printouts?

Can I do this on my inkjet printer at home?

I'll answer those questions for you in this article.

Printing on a sheet to overlay your birthday cake might seem like something you could not do at home.

If you don't want to eat that printout, it is something you can accomplish with your printer, existing ink and some tracing paper. If you do want to eat that printout, it is another story entirely.

To do a birthday cake printout that you can eat you are going to need some specialized equipment and paper.

A compatible printer
Edible Ink Cartridges
Edible Paper
Edible Pens

Compatible Printer

You don't have to buy a new printer to print edible birthday cake printouts. It's possible to convert an old printer that has been used for regular printing jobs as a printer for edible ink. All that you need to do is to clean the printer, especially the printer head, thoroughly to remove all traces of the regular ink that was once used with it.

There are two brands of printers out on the market that have readily available edible ink cartridges for birthday cake printouts. Epson and Canon.

The Epson printers that are currently supported are:

WORKFORCE 500, WORKFORCE 600, NX100, NX200, NX300, NX400, CX5000, CX6000, CX7000F, CX7400, CX8400, CX9400F, and Stylus 1400.

Stylus Models: 1400, C87, C87+, C88 and C88+

The Canon printers that currently allow you to do birthday cake printouts are:

ALL-in-One Systems: MP510, MP520, MX700, MP500, MP800, MP810, MP830, MX850

Printers: IP3300, IP3500, IP6600D and IP6700D. There are various discontinued Canon printers out there in the Pixima line that can be used as well but I can't vouch for them.

Edible Ink Cartridges

Your printer is the first step in making birthday cake printouts. The second thing you're going to need is the specialty ink used to print your pictures. Not just any old ink will do. There are specialized FDA approved inks for use on your cake's edible paper.

These inks are not just any old ink. A great deal of care, cleanliness and formulation goes into the making of edible inks. Plain old food coloring injected in your old inject cartridge won't work, not to mention be safe!

Each printer has a specific requirement for the cartridges needed. Canon printers can get by with a black cartridge and a color cartridge. This might be fine if you are doing some very basic, low volume printing but remember the single color cartridges will not give you as much print output as individual tanks will.

Something else to consider is just how many prints are you going to make? Is this going to blossom into a little side business or do you plan to just print out one or two for your son's birthday?

If it is the former, by all means, get yourself a printer, ink and paper and go for it. If you just want to print out one sheet and put it on a cake, you might want to consider contacting one of the myriad of companies out there that do birthday cake printouts and have them do it for you.

The prices might seem high for a single printout but consider what it would cost to buy the ink cartridges ($50 or so) and clean your printer and buy the edible paper.

Edible Paper

The next item required for making a birthday cake printout is edible paper. While edible paper is related to the paper you use everyday at work and home there is a key difference. The ingredients. Edible paper is made from rice or potato starch.

Nearly all of the papers out there are Kosher to boot!

Depending on the brand and composition, the paper can be somewhat brittle so you have to be a little more careful handling it than you would with regular paper.

Most of these papers are designed only to melt in water (i.e. your mouth) and not on the cake. You can be assured of a very nice looking product if you pick a quality edible paper for your birthday cake printout.

Edible Ink Pens

Maybe you don't want to print on your cake but you would like to write on some of the edible paper with an edible color marker. Wilton, the everything about cakes company makes these and they are wonderful.

Let your kids draw on the edible paper and create their own decorations without all of the mess that would happen if you gave them a pastry bag and let them go to town on the cake.

Let the Kids Make Their Own Birthday Cake

It’s birthday time. And it is time for you to arrange your child’s birthday party.

There is so much to think about and do.

Firstly you need to find some invitations and write on them. This is after arguing about how many can come and who to invite.

You will need to come up with a menu of food and then either buy it or make it.

There are the decorations. Balloons, streamers, table cloth, banners…...

The party favors for all the guest to take home. Some food for the parents that stay. A party outfit for your child, something for you.

Argh! Does it ever stop.

And then, of course is the cake. Oh mi – the CAKE.

What to do? Well by this stage there is no budget left (that blew out at the invitation stage).

Do you make something?

You could.

But of course your child wants a cake that looks like a dalmatian puppy/palomino pony/tyrannosaurus/a transformer – that transforms/harry potter/hogwats. (What ever happened to Humpty Dumpty?)

Too hard, too tiring and not enough time.

OK. Lets try something novel.

Why not make (or buy) enough cupcakes for each child to have one. Cover with plain frosting.

And then ….

Let the Children decorate.

All you need do is to set out an array of candies, sprinkles and chocolates. And let each child decorate their own cupcake.

For smaller children just let them decorate which ever way they like.

But for older children, maybe you could set a theme. You could even go as far as to award prizes. Though, I do suggest enough prizes for each child. They could be awarded for the best use of candy, the most original, for thinking outside the square, most life like etc etc.

This not only solves the cake issue but keeps them occupied for ages.

And to cherish the moment, why not take a photo of each child’s completed cake.

Pink, Yellow, and Purple - These are her heiness's royal colors when planning your princess themed birthday party. Streamers, ribbons, and bows should be rich and full, and decorated with sparkling gems whenever possible. Package after package of plastic or rhinestone jewels are an absolute must for any princess party. They can be purchased in bulk at any craft store, for a relatively cheap price. Not only can you use them to decorate the room, but also to adorn the walls, the table, the games, and even the goodie bags each of your prince or princesses will be taking home - just keep them away from the princess cake! Be sure to dress your princess in a beautiful princess tutu or outfit befitting of her royal status. In addition to physical decorations, you should have some princess-like music playing in the background. Use any modern princess soundtrack, or download some Renaissance music from the internet for a more traditional royal sound.

Whether you make a simple sheet cake or build a multi-level castle, decorate the cake with some low-cost princess figurines from a craft or dollar store. Place candles on the tops of each of the castle's towers, and have the children sing happy birthday, saying the word 'princess' before your child's name.

Princess Birthday Party Bags - The dollar store is once again your friend. Any amount of low-cost princess theme birthday party toys and favors can be found at your nearest craft store. For another fun pre-party activity, find some white lunch bags and have your child pre-color them pink or purple and place the cutout of a princess or knight in shining armor on each of them. Children view this type of certificate as a fun accomplishment, and will be sure to run straight to their parents with it upon returning home.
